Recipe from The Pastry Affair.
I wanted to make something with my coconut flakes other than (what would have been my third batch of) coconut maple granola, so I dreamed up coconut pancakes and googled it, certain that it’s been done before – and indeed it has!
Two changes I made to the recipe:
1. I toasted the coconut flakes before using.
2. I replaced butter with coconut oil, for even more coconutty goodness.
These pancakes are heavenly, especially drenched in maple syrup. 😀
P.S. This is not turning into a food blog. It’s just the food I make is more blogworthy than my life right now.
